PENNE WITH ARTIHOKES, PROSCIUTTO AND PEAS

1/2 cup olive oil
6 medium artichokes, trimmed to hearts and cut into 1/4 inch slices
3 cups thinly sliced red onions
3 cups sliced mushrooms
2 cups shelled fresh peas
2 cup fresh asparagus, cut into 1 inch pieces
1/2 cup chopped prosciutto
3 lemons, juiced
1 1/2 tbsp clove garlic, minced
1 tsp chopped fresh thyme
2 lbs penne pasta, cooked al dente, drained
1 1/2 cups white wine
Grated parmesan cheese
Chopped parsley

Heat oil in a large skillet. Add next 9 ingredients and saute over medium-high heat until vegetables are tender-crisp, about 6-8 minutes. Add wine and cook, stirring until liquid is slightly reduced. Toss vegetable mixture with pasta, cheese and parsley. Serve immediately. Serves 6
