PENNE PASTA , CHICKEN & FETA CHEESE

1 each red, yellow and green bell pepper, chopped
1 cup zucchini, sliced
3 to 4 cloves garlic chopped
1/4 cup virgin olive oil
1/4 cup butter
1 cup shallots
1/4 cup basil
1/4 cup parsley
Salt, oregano & pepper to taste
4 chicken breasts
1/2 cup chicken stock
6 Roma tomatoes
1 small can black olives
Feta cheese (to taste)
Parmesan cheese
I package penne pasta
Saute chicken in olive oil, and remove, add remaining olive oil and butter. Sauté all vegetables until tender, then add back the sautéed chicken, olives, chicken stock, and simmer for 15 to 20 minutes. Cook pasta in salted water, drain.
In large bowl, put crumbled feta cheese (to taste), add a little hot water to make a paste. Add cooked pasta and coat with cheese. Add vegetables, stir, add Parmesan cheese and garnish with parsley.
