SPICY GROUND BEEF ENCHILADA FILLING

Category: Ground

2-1/2 pounds ground beef
2 medium onions, finely chopped
1 green bell pepper, seeded and chopped
1 jalapeno pepper, seeded and finely chopped
6 large garlic cloves, minced
3 tablespoon oil (this will help to brown the ground beef)
1 small can green chilies
1/2 to 3/4 cup refried beans (can omit I like to add them in)
1 package taco seasoning mix
2 teaspoons beef bouillon granules
1/2 teaspoon cayenne pepper (or adjust to heat level)
1-1/2 cups spicy red enchilada sauce
1 teaspoon seasoned salt, or to taste
Fresh ground black pepper, to taste

In a large skillet cook the ground beef with onion, bell pepper and jalapeno pepper until no longer pink; drain fat.

Add in garlic and 3 tablespoons of oil and continue cooking over medium-high heat until the meat is browned (this may take about 10-12 minutes). Add in green chilies, refried beans, taco seasoning mix, beef bouillon granules and cayenne; cook stirring until well combined (about 5 minutes).

Mix in enchilada sauce and continue cooking over low heat uncovered for about 20-25 minutes stirring frequently and seasoning with salt and pepper about halfway through cooking time. Divide and fill in flour tortillas for enchiladas.
