GRILLED BEEF AND POTATO SALAD DIJON

3/4 lb red or all-purpose white potatoes
1/4 cup coarse grain or regular Dijon-style mustard
2 tbsp vegetable oil
1 1/2 tbsp white wine vinegar
1/4 tsp each salt and coarse grind black pepper
3/4 lb cooked beef roast or steak, cut into 2 x 1 x 1/8 inch thick strips
1/2 cup coarsely chopped onion
2 1/2 tbsp minced parsley salad greens
Cut potatoes into 1 inch pieces; place in saucepan and cover with cold water. Bring to a boil, cover and simmer until tender, about 10 -12 minutes.
Meanwhile, combine mustard, oil, vinegar, salt and pepper in a large bowl.
Drain potatoes. Add hot potatoes to dressing, stirring gently to coat evenly; cool. Add beef, onion and parsley; toss gently to combine. Serve immediately or cover and chill. To serve, arrange on plate with salad greens.
