APRICOT-GLAZED CORN BEEF

1 pkg fully cooked corned beef brisket
1/4 cup apricot preserves
1 tbsp Dijon-style mustard
Ground red pepper

Bake brisket and about 20 minutes before done, combine remaining ingredients and pour over beef. Bake, uncovered, stopping and spooning glaze over brisket. When tender, remove to platter to rest about 20 minutes before carving against the grain.
