APPLE-GLAZED BRISKET

1 (4-5 lb) boneless beef brisket
1 medium onion, quartered
2 large halved garlic cloves
10 whole cloves
Water
1 oz apple jelly
1/3 cup dry white wine
3 tbsp Dijon or spicy brown mustard and minced green onions
1 1/2 tsp salt
3/4 tsp cracked peppercorns and curry powder
Place brisket, onion, garlic and whole cloves in a large Dutch oven. Add water to cover. Bring to a boil. Reduce heat, cover and simmer 2 1/2 - 3 hours or until tender. Drain brisket, cover and refrigerate up to 24 hours.
Glaze: Combine apple jelly and next 6 ingredients in a saucepan and heat until jelly melts, stirring occasionally. Place brisket in a shallow roasting pan. Brush with glaze and roast at 324 for 45 minutes, basting frequently with glaze. Place brisket on heated platter to rest before carving against the grain. Serve with remaining glaze.
NOTE: Brisket may be cooked on grill for 30 minutes instead of baked, basting often with glaze.
