FALL APART BOSTON BUTT

Category: Roasts/Tenderloins - Pork

1 (4 lb) Boston butt pork roast
1/4 - 1/3 cup Worcestershire sauce
3/4 cup packed brown sugar
1 cup apple juice

Preheat oven to 400. Lightly grease inside of baking dish. Put Worcestershire sauce in a separate bowl and soak the roast in the sauce. Remove roast and coat with brown sugar, being sure to press the sugar over all to form a crust. Place roast in the baking dish.

Pour the apple juice into the dish but do not pour over roast. Cover tightly. Place in the oven and immediately turn the heat to 200. Bake for about 5 hours. Uncover the roast and check for doneness. The meat should be so tender it falls apart easily. If it doesn’t, recover and cook for 30 minutes more or as needed.

NOTE: This can be prepared in a crock pot. Prepare roast as above and place into the crock pot. Before pouring apple juice into bottom, add 1/2 tsp salt to juice. Set crock pot on high for 30 minutes and turn setting low and cook for 8 hours.
