FROZEN STRAWBERRIES AND CREAM SQUARES

3 pints vanilla ice cream
1 cup vanilla wafer crumbs
1/3 cup toasted almonds, chopped fine
3 tbsp melted butter
1 tsp rum extract
1 (12 oz) jar strawberry preserves

Lightly grease an 8 inch square pan. Allow ice cream to soften. In a bowl, combine vanilla wafer crumbs, almonds, butter and extract. Sprinkle 1/3 of cookie mixture over the bottom of the pan. Spread softened ice cream over this. Spread half the preserves over the ice cream. Repeat the layering with cookie mixture on top. Freeze, covered with foil, until firm. Cut into squares when ready to serve. Serves 8
