CHOCOLATE PEANUT COOKIES

1/2 lb semi-sweet chocolate, coarsely chopped
1 3/4 cup flour
1/3 cup cocoa confectioners
1 tsp baking soda
1/2 tsp salt
1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup sugar
2 tbsp vanilla extract
2 large eggs
2 large egg whites
1 cup unsalted peanuts (about 6 oz)
1 cup peanut butter chips
Preheat oven to 375. Lightly butter cookie sheets. Melt chocolate in a small bowl over a pan of simmering water; let cool. In another bowl, combine dry ingredients.
In a mixing bowl, beat butter until light and fluffy. Add sugars and vanilla until creamy. Add melted chocolate eggs and whites, mixing until incorporated. Stir in dry ingredients just until combined. Add the peanuts and chips.
Scoop a scant 1/4 cup of the dough onto the prepared cookie sheets, leaving about 2 inch between the cookies. Bake for 10-12 minutes or just set in the middle, bake about 3 minutes longer for crispier cookies. Transfer to a wire rack to cool.
