BRUNCH BAKE

1 (8 oz) pkg sausage, casings removed and discarded
6 eggs, beaten
2 cups light cream or half-and-half
1/2 tsp salt
1/8 to 1/4 tsp pepper
1 tsp dry mustard
1 cup shredded sharp cheddar cheese
1 (2.8 oz) can French fried onions

Cook sausage in a large skillet, breaking up to crumble; drain and cool slightly. Mix together eggs, cream, seasonings, 1/2 cup cheese and 1/2 can onions. Stir in the sausage and pour mixture to a greased casserole dish. Refrigerate, covered, overnight.

Next morning, allow casserole to rest at room temperature at least 30 minutes before heating oven to 350. Bake for 45 minutes and then sprinkle with cheese and onions. Return to oven and finish baking, uncovered, for another 5 minutes or until hot, bubbly and cheese has melted and onions are golden brown. Allow to rest 15 minutes before serving. Serves 8
