Grilled - PARMESAN EGGPLANT

1 1/2 lbs eggplant, cut into thick slices
1/3 cup olive oil
2 tbsp vinegar
2 clove garlic, minced
1/2 tsp each salt, pepper and paprika
Topping: 3 tbsp grated parmesan cheese

Place eggplant slices on preheated grill. Mix together remaining ingredients and brush over eggplant. Continue to grill about 15 minutes or until tender, turning occasionally and brushing with oil mixture every couple of minutes.

When about done, turn again and brush with mixture. Sprinkle with cheese and continue cooking until melted. Remove and serve hot.
