ZITA CASSEROLE

6 oz fresh mushrooms, stemmed and cut in half
5 tbsp butter
1 tbsp vegetable oil
4 cups broccoli florets
1/2 cup sliced carrots
Water
3 tbsp flour
2 cups light cream
1 cup parmesan cheese
1 cup grated cheddar cheese
1/2 tsp salt
1/4 tsp pepper
1 lb zita, mezzani or other tubular macaroni
1 cup walnut pieces
In a skillet, melt 1 tbsp butter in toss in mushrooms. Coat 1-3 minutes and remove to bowl.
In same skillet, cook broccoli and carrots for 1 minute. Add 2 tbsp water, cover and cook for 3 minutes. Remove from heat and drain.
Cheese Sauce: In a saucepan, melt 4 tbsp butter, stir in flour, and let bubble for 2 minutes. Stir occasionally. Add slowly, cream, stirring constantly. Add remaining ingredients except pasta. Heat 2-3 minutes.
Put cooked pasta and remaining vegetables in a bowl. Gently toss. Add cheese sauce; toss and pour into baking dish. Bake, covered, at 350, for 25-30 minutes.
