LEMON SQUARES

1 cup flour
1/2 cup chilled unsalted butter, cut into 1/2-inch slices
2 tbsp sugar
2 tsp grated lemon peel
1 to 2 tbsp almond paste
Pinch of salt
Filling (see below)
Powdered sugar for dusting squares
Preheat oven to 375. Butter an 8-inch square baking pan.
Combine flour, butter, sugar, lemon peel, almond paste and salt in bowl of food processor fitted with steel blade and process until mixture just begins to form a ball. Pat mixture into prepared pan and bake in preheated oven 15 to 20 minutes or until pale golden. Reduce oven temperature to 350 degrees.
Meanwhile, prepare filling. Pour into crust and bake 20 minutes or until set. Cool, then chill. Before serving, dust with powdered sugar and cut into squares.
Filling:
1 cup sugar
1 tbsp plus 1 tsp cornstarch
1/2 cup freshly squeezed lemon juice
2 eggs
1 tbsp grated lemon peel
1/2 tsp baking powder
Wipe out bowl of food processor after making crust. Place all filling ingredients in work bowl and process until very smooth, about 1 minute.
