BEEF STIR-FRY SALAD

1 package (9 to 10 ounces) chopped hearts of romaine
12 ounces beef top round steak (about 3/4 inch thick)
Salt and pepper
1 tablespoon vegetable oil
1 medium red bell pepper, cut into strips
3/4 cup packaged coarsely shredded fresh carrots
1/2 cup chopped green onions
1/2 cup chopped dry roasted peanuts
Bottled sesame-ginger salad dressing

Divide romaine among 4 serving plates.

Thinly slice beef into bite-size strips. Season with salt and pepper.

In large skillet, cook beef in hot oil over medium-high heat 4 to 5 minutes, until brown. Add bell pepper and carrots; cook, stirring, 1 minute or so more. Remove skillet from heat and stir in green onions.

Spoon meat mixture over romaine on each plate. Sprinkle with peanuts. Drizzle with dressing. Serve immediately. Serves 4
