MARINATED HONEY-LIME PORK TENDERLOIN

Category: Roasts/Tenderloins - Pork

1/4 cup honey
1/3 cup lime juice
1 tsp grated lime peel
2 cloves garlic, minced
2 tbsp yellow mustard
1/2 tsp salt and pepper
2 (1 lb) pork tenderloins, well trimmed

Combine ingredients in a resealable bag and add tenderloins; seal and marinate in the refrigerator at least 4 hours; or overnight, turning the bag occasionally.

Preheat the broil and place the pork on a broiler pan. Discard marinade. Broil 7-9 minutes per side or until desired doneness.

Allow the tenderloins to rest a few minutes before slicing across the grain to serve.
