SPICY CHICKEN BITES

Category: Chicken

1/2 cup lemon juice
1/4 cup water
1 tbsp dried rosemary, crushed
2 cloves garlic, minced
1 tsp each Tabasco sauce and Worcestershire sauce
2 boneless, skinless chicken breasts, cut into bite-size cubes
1 slice bread, toasted
1/4 cup toasted almonds, chopped
2 egg whites, beaten

Combine first 6 ingredients and add chicken chunks; cover and chill at least 24 hours.

In a food processor, grind to coarse crumbs. Remove to a small bowl and stir in almonds. Remove chicken from marinade and roll in egg whites and then into crumbs mixture to coat evenly. Allow to rest about 10 minutes to let the coating harden on the chicken. Place on a baking sheet and bake at 400 for 10-12 minutes.
