ALL AMERICAN TURKEY CASSEROLE

1 cup uncooked wild rice
4 cups lightly salted water, turkey broth or chicken bouillon
1 lb sliced mushroom,
1/4 cup butter
5 tbsp flour
1 (13 oz) can evaporated milk
1 cup turkey broth and chicken bouillon
1 tsp salt
3 cups cubed cooked turkey
1 (2 oz) jar pimiento
1/2 cup sliced almonds or cashews

Rinse and drain rice. Combine with water in a 2 quart saucepan. Bring to a boil. Reduce heat. Simmer, covered, about 45-55 minutes. Drain.

In a large skillet, saute mushrooms in butter; stir in flour, milk, broth and bouillon. Simmer until thick. Add cooked rice, salt, turkey and pimientos. Pour into a large buttered baking dish. Sprinkle with almonds and bake, covered, at 350 for 45 minutes. Uncover and continue to bake 15 minutes.
