1 1/2 cups crushed vanilla wafers (about 50 cookies)
1/2 cup chopped pecans
1/4 cup (1/2 stick) butter, melted
32 ounces cream cheese, room temperature
1 cup sugar
1 cup sour cream
3 tablespoons flour
1 tablespoon vanilla extract
4 eggs
Fresh blueberries or blueberry sauce (see recipe) for topping
Preheat over to 325 degrees. Line 13-by-9 baking pan with foil, with ends of foil extending over sides of pan to form handles.
In bowl, mix wafer crumbs, pecans and melted butter. Press firmly into bottom of foil-lined pan.
In large bowl, beat cream cheese and sugar with electric mixer on medium speed until well blended. Add sour cream, flour and vanilla and mix well. Add eggs, one at a time, mixing on low speed after each addition just until blended. Pour over crust.
Bake in preheated oven 45 minutes or until center is almost set. Refrigerate 4 hours or overnight.
Using foil handles, lift out of pan onto cutting board. Cut into 32 bars and top with fresh blueberries or blueberry sauce.
Blueberry sauce:
1 pint fresh blueberries, rinsed
1 tablespoon sugar
In saucepan over low heat, cook berries until they break down. Add sugar. Cook about 10 minutes or until reduced to about 1 cup. Store leftovers in refrigerator. Makes 1 cup
