ORZO WITH PEAS AND PARMESAN

1 tablespoon butter
2 tablespoons extra virgin olive oil
1 small onion, finely chopped
1 clove of garlic, minced
1 pound orzo pasta
4 cups chicken broth
1 cup water
1 cup frozen peas
1/2 cup grated Parmesan cheese
Salt and freshly ground pepper to taste

In a large saucepan, heat butter and extra virgin olive oil. Add chopped onion and saute over medium heat until translucent, about 5 minutes. Stir in garlic and saute for an additional minute. Add orzo and cook until golden brown, about 3 minutes, stirring constantly.

Add chicken broth and water and bring to a boil. Reduce heat and simmer, stirring occasionally, until most of the liquid is absorbed, about 9 to 11 minutes, depending on orzo used and package directions.

Stir in peas, grated Parmesan and salt and pepper to taste. Let peas heat through. Serve warm. Serves 8-10
