BLUE CHEESE-STUFFED CELERY I

1 bunch celery, ribs separated, cleaned and trimmed
1 package (8 ounces) cream cheese, room temperature
4 ounces blue cheese
1/4 cup chopped fresh thyme, marjoram or Your favorite fresh herb
1/3 cup pine nuts, toasted

Cut celery ribs into 4- to 5-inch sections. In a bowl, mash cream cheese, blue cheese and herb until well blended. With a small spoon, stuff celery ribs, then sprinkle with toasted pine nuts. Makes about 1 1/2 cups of stuffing.
