SAUTEED STEAK WITH MUSHROOMS

1 tablespoon butter
1 1/2 teaspoons olive oil
4 beef filets, 11/2 to 2 inches thick
Salt and pepper to taste
8 ounces mushrooms, sliced
1/3 cup dry red wine
2 tablespoons minced green onions
1 clove garlic, minced
Heat butter and olive oil in a large skillet over medium to medium-high heat until foam subsides. Pat filets dry with paper towel. Saute filets in butter mixture about 4 minutes per side for medium-rare (130 degrees). Remove steaks to a heated platter. Sprinkle with salt and pepper.
Drain skillet. Add mushrooms, wine, green onions and garlic to skillet. Bring to a boil. Boil until reduced to desired consistency, stirring occasionally. Drizzle over filets. Makes 4 servings
