CHOCOLATE MINT SANDWICH WAFERS

2/3 cup butter, softened
1/2 cup sugar and packed brown sugar
1/4 cup milk
1 egg
2 cups flour
3/4 cup baking cocoa
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Filling
2 3/4 cups confectioners sugar
1/4 cup half-and-half cream
1/4 tsp peppermint extract
1/4 tsp salt
Green food coloring
Cream together butter and sugars. Add milk and egg; mix well. Combine dry ingredients and gradually add to creamed mixture and mix well. Cover and chill 2 hours or until firm.
Roll chilled dough on a floured surface to 1/8 inch thickness. Cut with a 1 1/2 inch cookie cutter and place 1 inch apart on greased baking sheets. Bake at 375 for 5-6 minutes or until edges are lightly browned. Remove to wire racks to cool completely.
Combine filling ingredients and spread on half of the cookies and top with the other half.
