CHOCOLATE HEAVEN LOGS

3/4 cup butter, softened
3/4 cup sugar
1 egg
1 1/2 tsp vanilla
2 1/4 cups flour, sifted
1/2 tsp salt
6 oz chocolate chips
Coating
6 oz semisweet chocolate chips
2 tbsp butter
1 1/2 cups ground walnuts
Line cookie sheets with parchment and set aside.
In a large bowl beat butter, sugar, egg and vanilla until well-mixed, about 2 minutes.
In a separate bowl, sift flour and salt. Blend flour into butter mixture. Stir in chocolate chips by hand.
On a lightly floured surface, shape dough, by the heaping tspful, into logs about 2 inch long and 1/2 inch wide. Place on parchment-lined cookie sheets and bake at 350 until cookies are set and lightly browned on bottom edge, 12 to 15 minutes. (The cookies will look quite pale on the top side.) Remove pans from oven and place on wire racks, allowing cookies to cool completely on the cookie sheets.
Prepare coating: Melt chocolate and butter in a double boiler or in a large glass bowl or measuring cup by microwaving and stirring every 15 to 25 seconds until smooth. If mixture seems too thick for dipping, add a little melted butter and stir until smooth. Place ground nuts in a small bowl. Dip one end of each cookie log into chocolate, scraping the excess from the back (flat side) of the cookie onto the side of the measuring cup or bowl. Roll or dip chocolate-coated ends in nuts. Place on waxed paper until set. Store covered in a single layer.
