ITALIAN CHICKEN WITH GARLIC AND ONION

4 boneless, skinless chicken breasts
2 eggs, beaten
1/2 cup Italian bread crumbs
2 1/2 tbsp grated parmesan cheese
1/4 cup plus 1 tbsp olive oil, divided
4 clove garlic, minced
1 large onion, chopped
3/4 tsp each basil and oregano
1/4 tsp crushed red pepper, more if you want it a little hotter

Combine bread crumbs and cheese in a bowl. Dip chicken in egg and then in bread crumb misture. Heat 1/4 cup oil in a skillet. Add the chicken and saute for 7-10 minutes per side, or until juices run clear. Remove the chicken and set aside, keeping them warm.

In the same skillet, heat 1 tbsp olive oil and add remaining ingredients and saute for 5 minutes or until golden brown. Serve with Italian Salsa.

Italian Salsa
6 Roma tomatoes, seeded and cubed
1/2 cup chopped onion
1/2 cup chopped roasted sweet peppers
1/4 cup chopped bell pepper
1/4 cup chopped fresh basil
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 minced garlic clove
Salt and pepper

Mix all together and put in fridge for at least 2 hours.
