CHICKEN WITH GARLIC AND HERB CREAM CHEESE

2 tbsp butter
4 oz cream cheese, softened
3 tbsp minced fresh herbs (such as chervil, chives, dill, marjoram, parsley, tarragon or thyme)
2 clove garlic, minced
Salt and pepper, to taste
4 bone-in, skin-on chicken breast halves

Preheat oven to 425. Place the butter in a baking dish and heat in oven just until the butter is melted.

Meanwhile, in a small bowl, combine the cream cheese, herbs, garlic, salt and pepper. Using about 2 tbsp of mixture for each chicken, rub mixture under the skin, spreading the mixture to coat the meat evenly. Transfer to the preheated pan. Brush the top of each piece generously with the melted butter. Season with salt and pepper. Roast the chicken, uncovered, until cooked through or juices no longer run pink, about 20-25 minutes.
