REAL GERMAN POTATO SALAD

2 1/2 to 3 pounds red salad potatoes
5 slices bacon
1/2 cup white vinegar
1/2 cup beef broth
1 teaspoon sugar
1 teaspoon salt
1 cup chopped green onions
Salt and pepper to taste
1 hard-cooked egg, chopped (optional)
1 to 2 tablespoons fresh chopped parsley (optional)

Boil potatoes until cooked, about 25 minutes (depending on size).

Meanwhile, chop bacon and cook until crisp. Remove from pan with slotted spoon and set aside.

In saucepan, combine vinegar, broth, sugar and salt. Heat over medium heat, stirring, until sugar is dissolved. Allow to cool.

When cool enough to handle, slice potatoes into 1/4-inch-thick slices and place in medium bowl. Pour vinegar mixture over potatoes and gently toss. Add green onions and bacon and toss again. Taste and add salt and pepper, as needed. Garnish with chopped egg and fresh parsley, if desired.
