OKTOBERFEST CHEESE DIP

1 Camembert (8 to 10 ounces), very ripe
1/2 small yellow onion, peeled and very finely chopped
2 tablespoons unsalted butter, room temperature
1 teaspoon paprika
3 tablespoons sour cream
Salt and freshly ground black pepper to taste
Assorted dippers

In a medium bowl, mash Camembert with a fork. Mix with the onion, butter, paprika and sour cream. Season to taste with salt and pepper. Refrigerate mixture. Remove from refrigerator one hour before serving to bring to room temperature. Serve with pretzels, radishes and other raw vegetables if desired. Makes about 4 to 6 servings
