CHICAGO-STYLE DEEP DISH PIZZA

Frozen bread dough, thawed

Sauce:
2 tbsp olive oil
2 cloves garlic, minced
1 (28 oz) can Italian plum tomatoes
1 small onion and green pepper, chopped
1 1/2 tsp oretano
1 tsp basil
1/2 tsp fennel seeds and salt
1/4 tsp pepper
1 tbsp lemon juice
2 tbsp red wine

Filling:
3 pkg spinach, cooked, drained, coarsely chopped
3 cups shredded mozzarella cheese
1/2 cup parmesan cheese
1/4 tsp salt and pepper
1 tsp basil
1/4 tsp oregano
2 cloves garlic, minced
2 tbsp olive oil
2 cups mushrooms, thinly sliced
1 lb cooked and drained Italian sausage
1 cup thinly sliced pepperoni

For pan:
Seasoned bread crumbs
Olive oil

Sauce: Saute garlic in oil until softened. Add remaining ingredients. Simmer on low, until sauce thickens (20-30 minutes.) Cool thoroughly.

Filling: In a large toss together the first 9 ingredients. Preheat oven to 450. Assembly: Smeat a 12 inch deep dish pizza pan with some oil and sprinkle with bread crumbs. Press out 2/3rds of dough to a 16 inch circle. Line pan, allowing for an overhang. Spoon in some sauce, then all of the filling ingredients. Roll remaining dough out to a 12 inch circle. Place on top and crimp sides. Top with sauce and then the cheeses. Bake until sizzling and golden, about 30-40 minutes. Let cool for 10 minutes before slicing.
