ASPARAGUS HAM BAKE

1 tbsp butter
2 tbsp minced onion
1 tbsp diced pimento
3 oz cream cheese, cut into chunks
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
8 oz fresh asparagus, trimmed and cut into 1inch pieces
8 oz chunked or shredded ham
6 hard-boiled eggs, peeled and coarsely chopped
1 cup grated Monterey jack cheese

Preheat oven to 350. Saute onion in butter until soft. Add cream and stir constantly until melted and smooth. Slowly add cream, stirring constantly. When well blended, add cheese and pimento, stir to blend; remove from heat and set aside. Boil or steam asparagus until crisp tender. Mix with ham, reserved sauce and half of the eggs. Place in a 2-quart baking dish and top with remaining eggs and grated cheese. Bake until top is golden, about 25 minutes. Serves 6
