APRICOT PORK LOIN

4 lb boneless pork loin, tied for roasting
Season salt, to taste
1 (15 1/4 oz) can apricot halves, juice reserved
1 cup sugar
1 cup water
1 tsp lemon juice
Spray a 13x9 inch baking pan with cooking spray. Place loin in a baking dish; sprinkle with salt. Bake at 325, covered, for 2 1/2 - 3 hours, or until meat thermometer registers 160; let rest 10 minutes.
Meanwhile, combine apricot halves with 1/4 cup juice; break apart halves and mash. Blend in sugar, water and lemon juice. Bring to a boil and cook 2-3 minutes; remove from heat. Splice loin and serve with sauce. Serves 8
