APRICOT-GLAZED PORK ROAST AND STUFFING (Crock Pot)

4 cups herb-seasoned stuffing cubes
3/4 cup chicken broth
1/2 cup dried apricots, chopped
1/3 cup frozen chopped onions
2 – 2 1/2 lb pork boneless loin roast
1/3 cup apricot jam
1 tbsp balsamic or white vinegar

Spray crock pot with cooking spray. Mix first 4 ingredients and put into crock pot. Add roast. Mix jam and vinegar; brush over pork. Cover and cook on low for 7-8 hours or until pork is tender. Stir stuffing just before serving. Serves 6
