SPICY PORK ROAST

4-5 lb pork loin roast
1 tsp salt
Sauce:
1/2 cup currant jelly
1/4 cup honey
1/4 cup lemon juice
1 tsp dijon mustard
1/2 tsp allspice

Rub roast with salt. Place roast fat side up on a reack in a shallow uncovered baking pan. Roast at 325 degrees until fork tender (about 2 1/2 hours) or until thermometer reachers 170 degrees.

Place all ingredients for sauce in a small sauce pan and stir until jelly is melted. Boil one minute. Brush glaze over roast several times during the last 30 minutes of roasting. Save remaining glazed to serve with roast after slicing. Serve with Apple Bleu Cheese Salad, Apples and Onions and green beans.
