PORK LOIN ROULADE

4 boneless center pork loin slices, about 1 lb
1/2 red and green peppers, cut into strips
1 tbsp vegetable oil
2/3 cup orange juice and barbecue sauce
1 tbsp Dijon-style mustard
Pound cutlets between 2 pieces of plastic wrap to about 1/4 inch thickness.  Place several pepper strips cross-wise on each pork portion; roll up jelly-roll style and secure with toothpicks.  
In a skillet, brown in oil.  Drain fat from pan.  Combine remaining ingredients and add to the skillet.  Return meat to pan.  Bring mixture to a boil and reduce heat.  Cover and simmer for 10-12 minutes or until pork is tender.  Remove toothpicks before serving.
