BEER-BASTED SAUSAGE

2 tbsp canola oil
3 medium onions, peeled, quartered and sliced very thin
1/8 tsp salt
1/8 tsp black pepper
2 tbsp spicy brown mustard
1 package (1 lb) bratwurst (6 to 8 sausages)
1/2 cup beer
In a large skillet, heat the oil over medium-low heat. Add the onions; saute for 10 to15 minutes, or until tender and golden, stirring often. Season the onions with salt and pepper then stir in the mustard. Add the bratwurst; cook for 7 minutes, or until the sausages are plump. Stir in the beer, and simmer for 2 to 3 minutes. Serve the bratwurst topped with the onions. Serves 3-4
