SALMON RICE AU GRATIN

1/4 cup butter
1/2 cup chopped celery
2 tbsp minced onion
1 clove garlic, minced
2 tbsp flour
1 tsp salt
Dash pepper
1 can cream of mushroom soup
1 cup milk
1 (10 oz) pkg frozen chopped spinach or broccoli, thawed, drained and squeezed dry
2 cups cooked rice
1 lb canned salmon, drained, boned and flaked
8 oz shredded sharp cheddar or American cheese
Bread or cracker crumbs
Butter
Preheat oven to 350. Melt butter in a saucepan and saute vegetables and garlic. Cook until onions are transparent. Add flour and seasonings. Stir in milk and soup until smooth. Blend sauce with remaining ingredients and pour into a butter casserole dish. Top with crumbs and dot with butter. Bake for 25-30 minutes.
