BOURBON SHRIMP

1 lb shrimp, peeled
2 tbsp unsalted butter
1/2 cup bourbon
2 tsp tomato paste
1 cup heavy cream
1 tsp chopped dill
Salt and white pepper, to taste
Rice or pasta, cooked as directed
In a skillet, heat butter and add shrimp. Saute 1 minute until just pink and add bourbon. Raise heat to high and saute until liquid is reduced to a few tablespoons, about 1 minute. Add paste and cream, continue to cook 1 minute. Remove shrimp with a slotted spoon; set aside. Reduce the sauce by half, add dill and season with salt and pepper. Just before serving, replace shrimp in sauce and serve over rice or pasta. Serves 4-6
