GARLIC ROSEMARY CHICKEN - Crock pot

1 (5 lb) roasting chicken, skinned and giblets removed
2 (5 inch) sprigs rosemary
2 stalks celery with leaves, each cut into 4 pieces
2 small onions, quartered
16 cloves garlic, peeled
1 lemon, juiced
1/2 tsp each paprika, salt and pepper
Rosemary sprigs, optional

Clean chicken under cold water and patted dry. Trim excess fat. Place rosemary, 4 onion wedges and 4 clove garlic in cavity of chicken. Sprinkle with salt and pepper.

Tie legs with twine and place chicken, breast side up, in crock pot. Add remaining onion and garlic to crock pot and drizzle lemon juice over chicken and add the squeezed lemon pieces into the pot. Sprinkle with seasonings cook on LOW for 8 hours. Discard rosemary and lemon pieces.
