CHOCOLATE COCONUT TOFFEE DELIGHTS

1/2 cup flour
1/4 tsp baking powder and salt
1 (12 oz) pkg chocolate chips, divided
1/4 cup butter, cut in small pieces
3/4 cup packed brown sugar
2 eggs, beaten
1 tsp vanilla extract
1 1/2 cups flaked coconut
1 cup English toffee baking bits

Preheat oven to 350. Line cookie sheets with parchment paper.

On a piece of wax paper, combine dry ingredients. Melt 1 cup chocolate chips in the microwave for 1 minute, stirring after 30 seconds. Stir until smooth. Add butter to chocolate and stir until melted. Beat in brown sugar, eggs and vanilla with a wooden spoon until well blended. Beat in flour mixture until blended. Stir in remaining ingredients.

Drop by 1/3 cupfuls onto prepared cookies sheet 3 inch apart. Flatten with a rubber spatula into 3 1/2 inch circles. Bake for 15-17 minutes or until edges are just firm enough to touch. Cool on cookie sheet for to minutes. Slide parchment paper and cookies onto countertop to cool completely. Store in airtight containers or freeze.
