* SPINACH GRATIN*

4 tbsp unsalted butter
2 large onions, chopped
1 lb mushrooms, chopped (I just like to add these)
1/4 cup flour
1/4 tsp grated nutmeg
1 cup heavy cream
2 cups milk
5 (10 oz) pkg frozen chopped spinach, thawed and squeezed dry
1 cup grated parmesan cheese
1 tbsp kosher salt
1/2 tsp pepper and garlic powder
1/2 cup grated gruyere cheese
Preheat oven to 425. Melt butter in a saute pan and cook onions and mushrooms until translucent, about 15 minutes. Add the flour and nutmeg and cook, stirring, for 2 more minutes. Add the cream and milk and cook until thickened. Add the spinach, 1/2 cup parmesan cheese and mix well. Season with salt and pepper. Transfer the spinach to a baking dish and sprinkle the remaining parmesan cheese and gruyere on top. Bake for 20 minutes until hot and bubbly. Serve hot.
