BAKED STUFFED SHRIMP III

1 lb jumbo shrimp shelled, peeled, deveined, cleaned and butterflied
1 tbsp olive oil
3 green onions, minced
2 clove garlic, minced
1 tbsp parsley
1/4 tsp thyme
1 tbsp chopped sun-dried tomatoes, heaping
3/4 cup bread crumbs
1 tbsp parmesan cheese
Salt and pepper
Lemon wedges

Spray a baking pan with cooking spray and arrange the shrimp on the pan. Heat oil in a large skillet and saute first 4 ingredients until onions become soft. Remove from heat and mix together next 5 ingredients. Preheat oven to 450.

Carefully pack the bread mixture into opening of each shrimp, dividing evenly. Bake until shrimp are cooked through, about 10-12 minutes. Sprinkle with lemon juice just before serving. Garnish with lemon wedges.
