BAKED STUFFED SHRIMP II

12 jumbo shrimp shelled, peeled, deveined and cleaned
1/4 lb scallops
1 sleeve butter cracker, crushed
1/4 cup parsley
2 clove garlic, minced
2 tsp grated lemon zest
1/2 cup butter
2 tbsp parmesan cheese
2 tbsp lemon juice
Split shrimp along the backs but not all the way through. Remove the vein. Spray a baking pan with cooking spray and arrange the shrimp on the pan. Melt butter in a large skillet and saute garlic until softened. Add remaining ingredients and stir until mixed. Mixture should be moist enough to mold when pinched. Stuff mixture into opening of each shrimp, dividing evenly. Bake at 350 for 10-12 minutes or until shrimp are cooked through, about 5 minutes. Sprinkle with lemon juice just before serving.
