BAKED STUFFED SHRIMP

24 jumbo shrimp shelled, deveined and cleaned
6 tbsp olive oil
2 cups bread crumbs
2 clove garlic, minced
2 tbsp parsley
2 tsp grated lemon zest
2 tbsp parmesan cheese
2 tbsp lemon juice
Split shrimp along the backs but not all the way through. Remove the vein. Spray a baking pan with cooking spray and arrange the shrimp on the pan. Heat 4 tbsp olive oil in a large skillet. Add bread crumbs and cook, stirring, over medium low heat until golden. Add 2 tbsp parsley, garlic, lemon zest and cheese; cook, stirring, 1 – 1 1/2 minutes. Remove from heat.
Preheat oven to 450. Carefully pack the bread mixture into opening of each shrimp, dividing evenly. Brush or drizzle each shrimp with remaining oil. Bake until shrimp are cooked through, about 5-10 minutes. Sprinkle with lemon juice just before serving.
