BAKED SHRIMP WITH FETA CHEESE II

6 tbsp butter
2 clove garlic, minced
2 lb shrimp, shelled and deveined
1/2 tsp dried oregano, crumbled
1/4 tsp red pepper flakes
3/4 cup dry vermouth
12 oz fresh plum tomatoes, peeled, cored, seeded and diced
3 oz feta cheese
1/4 cup chopped fresh parsley
Preheat oven to 350. In a skillet, melt butter. Add garlic and next 3 ingredients. Cook until the shrimp are just pink, turning once, about 3 minutes. Transfer the shrimp to a large casserole or individual gratin dishes. Arrange the shrimp in a single layer.
Add the vermouth to the skillet and boil until liquid is reduced by half. Add the chopped tomatoes and stir until heated through. Top the shrimp with the tomato mixture and crumbled feta cheese. Bake until the cheese is bubbly, 8-10 minutes. Sprinkle with minced parsley. Serve.
