SEAFOOD CHOWDER

2 lb crab meat
1 lb small shrimp, cleaned, cooked
1 cup flour
4 cans minced clams
8 cups milk
2 cups half-and-half
1 bunch green onions, chopped
1 cup dry white wine
1/3 cup pale dry sherry
Parsley
3/4 cups chives, minced
3/4 cup macadamia nuts, chopped
1 1/4 cups butter

In a Dutch oven, melt 3/4 cup butter. Whisk in flour and cook 2 minutes, stirring constantly. Drain liquid from clams into pot, reserving clams. Whisk to blend well.

Gradually whisk in milk and cream, cooking until thickened and smooth. Melt remaining butter in skillet and saute green onions, both tops and bottoms, until limp. Stir in seafood. Stir lightly until heated through. Add mixture to chowder. Stir in wine and sherry. Heat but do not boil. Garnish with parsley, chives and nuts.
