OVEN LIME PORK FAJITAS

1 medium onion, green and red bell pepper, cut into strips
Grated peel and juice from 1 lime
1/2 tsp ground cumin
1 envelope Shake N Bake Extra Crispy Seasoned Coating Mix
4 boneless pork chops, 1/2 inch thick
8 flour tortillas
Mix vegetables, 1 tbsp oil, lime juice and cumin in a 13x9 inch baking pan.
Mix coating mix and lime peel, then use to coat chops as directed on pkg. Discard any remaining coating mix. Place chops on vegetable mixture in baking pan. Bake at 425 for 25 minutes or until chops are cooked through. Remove chops and cut into strips.
Spoon sliced meat and vegetable mixture evenly over tortillas; roll. Serve with salsa and sour cream. Serves 4, 2 fajitas each
