TURKEY SALAD ORIENTAL

3 cups cooked turkey or chicken, julienned
2 cups snow peas
1 cup papaya or mango, sliced
1 red onion, sliced
Toasted sesame seeds
Leaf lettuce

Dressing
1/2 cup soy sauce and red wine vinegar
1/4 cup sesame oil and peanut oil

Combine dressing ingredients and refrigerate. Shake well before using. Blanch snow peas in boiling water for 1-1/2 minutes then immediately plunge into cold water. Drain, julienne and chill.

Immediately before serving, line plates with lettuce leaves. Arrange turkey strips, snow peas, fruit and onion rings on lettuce. Drizzle with dressing (or serve on the side) and garnish with toasted sesame seeds. Serves 4
