MEDITERRANEAN PORK ROAST - Crock Pot

1/4 cup olive oil, enough to coat bottom of crock pot
2 clove garlic, peeled and crushed
1 small onion, sliced
1 (4-rib) pork roast
Salt and pepper
1 (28 oz) can crushed tomatoes
10 pitted kalamata olives
1 can artichoke hearts
1 tsp anchovy paste
1/2 cup white wine
5 bay leaves
1/2 cup toasted pine nuts
1/4 cup parmesan cheese
Heat the oil in the cooker on inchhigh inch for about 20 minutes or until hot. Add the garlic and onion and cook until transparent. Reduce heat to low. Season pork with salt and pepper.
Add remaining ingredients to crock pot except nuts and cheese. Cook on LOW for 10-12 hours or until meat is tender. Remove from cooked and allow to rest for 10-15 minutes. Slice meat and serve with sauce. Garnish with nuts and cheese. Serves 4
