SAUCY PORK MEDALLIONS

1 lb pork tenderloin, cut into 1/2 inch slices and flattened
1 tsp salt
1/2 tsp pepper
2 tbsp butter
1 tsp minced ginger root and minced garlic
1 tbsp cornstarch
1 cup apple juice
1/4 cup water
2 tbsp balsamic vinegar
2 (4.5 oz) jars sliced mushrooms
Sprinkle pork with salt and pepper. Melt butter in a skillet and add pork. Cook 8minutes or until browned, turning once. Remove from skillet and add ginger root and garlic to skillet; cook and stir 1 minute or until tender.
In a medium bowl, combine cornstarch and next 3 ingredients; mix well. Add to the mixture to the skillet. Bring to a boil and reduce heat to medium-low. Add mushrooms and pork; cook 10 minutes or until sauce is desired consistency, stirring occasionally.
