SASSY ITALIAN SAUSAGES - Crockpot

4 to 6 Italian sausages
2 tbsp tomato paste
1/2 tsp dried sweet basil
1/2 tsp dried oregano leaves
4 to 6 medium tomatoes, diced
2 onions, halved and sliced
1 small green bell pepper, cut in strips
Dash cayenne pepper, more or less to taste
Salt and pepper to taste
Sliced mozzarella cheese, if desired

In a medium saucepan, simmer sausages in water for about 20 minutes; drain and transfer to crock pot. Add remaining ingredients. Cover and cook on LOW for 6 to 8 hours. Serve on crusty rolls or finish with a topping of mozzarella cheese and place under the broiler until cheese is melted and bubbly.
