BAKED SCALLOPS

1 lb scallops
2 tbsp chopped shallots
6 tbsp butter
1 tsp lemon juice
1/2 cup bread crumbs
2 tbsp chopped parsley
Rinse scallops in cool water; dry on paper towels. Place in butter casserole. Saute shallots in 2 tbsp butter until soft; distribute evenly over scallops. Melt remaining butter, add lemon juice. Pour over scallops; sprinkle with crumbs. Bake at 375 for 12-15 minutes or until scallops are tender when pierced with a knife. Serve hot; garnish with parsley. Serves 4
